CAMBRIDGE — Initially, Bill Hubbard had a dream of operating an ice cream truck.
After a reputable ice cream company declined because they didn’t want their product sold from a mobile trailer, he pivoted and found another business, one more aligned with his values, to help him realize his dreams.
Wednesday, Hubbard’s dreams turned into something even more grand: a new storefront in Cambridge.
The Dorchester County Chamber of Commerce celebrated Chilly Billy’s Ice Cream’s official opening with a ribbon-cutting ceremony. The shop is located at 600 Roslyn Avenue.
Hubbard has a partnership with Frozen Farmer, a company that also began as a food truck and was propelled after signing a deal with Lori Greiner on the television show Shark Tank.
To Hubbard, it seemed like a natural partnership. Katie Evans with Frozen Farmer embraced Hubbard’s ideas, and now the food truck has evolved into a brick-and-mortar store: Chilly Billy’s.
After tasting Frozen Farmer’s product, Hubbard and his wife, Debbie, were convinced of its superior quality, believing it would “sell itself.†Their confidence in the product drove the partnership, which Hubbard describes as “meant to be.â€
“We knew the minute that we tasted that product,†Hubbard said. “I looked at her (Debbie) and she looked at me and said, ‘this will sell itself.’â€
Hubbard credits his wife and daughter as essential to the business, saying he couldn’t do it without them, and that they keep him “grounded.†The Chilly Billy’s team includes local students hired by his daughter, who he said have become like family, creating a strong, team-oriented environment crucial to their success.
“My wife has been the backbone,†Hubbard said. “My daughter, my gosh, without my wife and my daughter, there’s no way I could do it.â€
Evans said discovering the businesses shared certain values made the collaboration feel like a natural partnership, strengthening the relationship beyond a supplier-client dynamic.
“I found out that Chilly Billy’s was family-owned and Christian-rooted. It honestly is the perfect partnership,†Evans said.
Debbie said Chilly Billy’s aims to offer more affordable treats for families. Inspired by “old-fashioned†concepts, the ice cream business serves Italian ice and snow cones as lower-cost alternatives to ice cream, so families with multiple children can enjoy an outing without a major financial burden.
“We definitely want families to be able to come and enjoy our stuff,†Debbie said.
Chilly Billy’s Ice Cream is open from noon to 8 p.m. Wednesdays through Sundays, according to the Dorchester Chamber of Commerce website.
